Preparation
Rub Bill’s Season All generously on the brisket, wrap in foil, and let set in the refrigerator overnight. (You can let it marinate for a couple of nights.) When you are ready to cook your brisket, unwrap meat and add slices of onion and jalapenos on top of meat then wrap back in foil. Put on pit at about 250 degrees for 4 to 5 hours. Open foil and cook for another 2 hours. We use the juice from the brisket along with your favorite barbecue sauce added together to add to your table as sauce. This recipe can be altered to cook in oven.
